Cranberry Blue Cheese Salad

Although I spend a lot of time in the kitchen, sometimes I just need to be done.  However, we do still need to eat. I love making salads because not only are they delicious and nutritious, but they take no time to put together. This Cranberry Blue Cheese Salad is no exception to that rule.

This is a refreshing salad whenever you don’t want a heavy meal. In addition to loads of texture, this salad just bursts with flavor. Home made raspberry vinaigrette perfectly balances the combination of cranberry, apple, pear and blue cheese and makes this salad just right as a side salad or with a crunchy loaf of bread as a meal.

So take the extra time to go outside and enjoy the beautiful weather.

Instructions
  1. Arrange spring mix in a large shallow bowl.
  2. Slice pears in half and then make thin slices out of the halves.
  3. Arrange pears in the bowl.
  4. Mix cranberries, apples and pecans in a separate bowl and then sprinkle in the middle of the bowl.
  5. If desired, top with crumbled blue cheese.
  6. Serve with our Raspberry Vinaigrette, see notes below for recipe link.
