Christmas is the only time of year that you can decorate a cake to look like a piece of wood and call it festive. In honor of the holiday season, we present to you, our gluten free Yule Log. Lightly spiced, this cake is a delicious addition to your holiday table.
Winter solstice used to be celebrated with bonfires and reminded people that the sun and warmth would again return, even during the darkest hours of winter. The tradition was carried on in private homes with the burning of the Yule log. The log was intended to burn all night from December 24th on into the 25th. As time went on, cake came to represent the Yule log.
The secret, to a beautifully rolled cake, is to roll the cake in a powdered sugar covered towel while it is still warm and then allowing it to cool completely. Once it is cooled, the cake can be gently unrolled, filled and rolled back up again with out any problems. The cake can be made ahead of time and refrigerated, still in the towel, for a day or two, until needed.
And frosting is quick and easy, using our chocolate buttercream recipe. Frost the cake and then to create log texture, use an inverted spatula or fork. If filling and frosting with chocolate buttercream, double the frosting recipe.
Embrace the season by decorating with small plastic holiday decorations, cranberries or berries. Sprinkle with powdered sugar to finish off your beautiful Yule Log.
