Goat Cheese Mashed Cauliflower

Where I live, our winters are very snowy and cold and  I crave comfort food. This mashed cauliflower satisfies all those cravings. By popular demand, this delicious recipe has been added to our family list of favorites. I used a garlic and herb blend goat cheese, but you can use any flavor combination that you wish.

If you want, mash the cauliflower with a potato masher and leave small chunks for smashed cauliflower instead of mashed for more texture.

Instructions
  1. Wash and core the cauliflower head, be sure to remove the stem from the cauliflower. Cut the cauliflower into florets
  2. Steam cauliflower for 10-12 minutes, you want the cauliflower fork tender
  3. Let the cauliflower cool for 10 minutes. Process the cauliflower in a food processor until smooth using a spatula to scrape sides. You could also use a potato ricer or a food mill to process the florets. For smashed cauliflower use a potato masher for this step
  4. In a small saucepan, melt the butter, then add the cream and goat cheese. Simmer over very low heat until the goat cheese is completely melted
  5. Place cauliflower in a mixing bowl and add the butter mixture and salt, mix well
  6. Place mixture in a casserole dish and turn fresh pepper grinder 3-4 turns over cauliflower, broil about 4 minutes until lightly browned
  7. Add fresh chopped parsley and a tab of butter on top and serve
Recipe Notes

This is a great make ahead recipe that can be made 2 days in advance.  Heat this through and finish with a tab of butter and some fresh chopped parsley.
