Where I live, our winters are very snowy and cold and I crave comfort food. This mashed cauliflower satisfies all those cravings. By popular demand, this delicious recipe has been added to our family list of favorites. I used a garlic and herb blend goat cheese, but you can use any flavor combination that you wish.
If you want, mash the cauliflower with a potato masher and leave small chunks for smashed cauliflower instead of mashed for more texture.

Ingredients
- 1 head cauliflower
- 4 tbsp butter unsalted
- 1/4 cup heavy whipping cream
- 1/2 tsp salt
- 2 oz goat cheese garlic and herb blend
- black pepper freshly ground (to taste)
- 1 tsp parsley (optional) for garnish

Instructions
- Wash and core the cauliflower head, be sure to remove the stem from the cauliflower. Cut the cauliflower into florets
- Steam cauliflower for 10-12 minutes, you want the cauliflower fork tender
- Let the cauliflower cool for 10 minutes. Process the cauliflower in a food processor until smooth using a spatula to scrape sides. You could also use a potato ricer or a food mill to process the florets. For smashed cauliflower use a potato masher for this step
- In a small saucepan, melt the butter, then add the cream and goat cheese. Simmer over very low heat until the goat cheese is completely melted
- Place cauliflower in a mixing bowl and add the butter mixture and salt, mix well
- Place mixture in a casserole dish and turn fresh pepper grinder 3-4 turns over cauliflower, broil about 4 minutes until lightly browned
- Add fresh chopped parsley and a tab of butter on top and serve
Recipe Notes
This is a great make ahead recipe that can be made 2 days in advance. Heat this through and finish with a tab of butter and some fresh chopped parsley.
