I love this tomatillo salsa verde recipe. It is a simple recipe of tomatillos combined with fresh cilantro, lime and jalapeño.
Because it is so versatile, I use for tomatillo salsa alongside almost every meal. Of course, it is always delicious just with chips and any Mexican dish. Buy I don’t stop there.
Try mixing this salsa together with plain rice or pasta for a kick of flavor. Or use it as the base for a salad dressing by mixing it with olive oil. I find myself going back to this tomatillo salsa again and again.
If you are concerned about the spice level, make sure that you seed your jalapeno. If you are still concerned, then start with just one half of a jalapeno. When handling the jalapeno, be very careful not to touch your face. It is equally important to always wash your hands well after dicing up your jalapeno. I use disposable plastic gloves.

- 1 lb tomatillos husked, washed and quartered (about 8 tomatillos)
- 1 yellow onion small, quartered
- 1 jalapeño seeded (optional) and diced
- lime juice juice of 1 lime
- 1/4 tsp cumin ground
- 1/2 cup cilantro loosely packed
- 1 clove garlic peeled and diced
- 1/4 cup vinegar distilled, white
Ingredients

- Place tomatillos, onion, jalapeño, garlic, lime juice and cilantro in high powered blender or food processor; blend well
- Place tomatillo blend in a saucepan and add cumin and vinegar; stir
- Cook on medium heat for 10 minutes
- Let cool; you can keep in the refrigerator for up to one week
