This Cranberry Blue Cheese Salad is a refreshing salad when you don’t want a heavy meal. Made with a combination of cranberry, apple, pear and blue cheese and served with homemade raspberry vinaigrette, this salad is perfect for lunch or as a side salad dinner.

Cranberry Salad with Blue Cheese
Arrange spring mix in a large shallow bowl
Slice pears in half and then make thin slices out of the halves
Arrange pears in the bowl
Mix cranberries, apples and pecans in a separate bowl and then sprinkle in the middle of the bowl
Top with crumbled blue cheese (if using)
